breakfast: pita with melted Earth Balance and leftover cabbage

post breakfast snack: graham crackers and more graham crackers. chocolate chips and more chocolate chips (Ghirardelli semi sweet)

lunch: gardein santa fe good stuff.  This was only ok.  I don’t often buy prepared fake meat, but I have been hearing a lot about Gardein so I wanted to try something of theirs.  It was lacking flavor and had too much salt.

dinner: chickpea and quinoa pilaf.  This is a pretty standard (i.e. not very exciting) recipe.  I didn’t feel like going out in the snow today so I had to make something with ingredients I had around the house.  I added broccoli and red pepper.

post dinner snack (there is nothing to do when you are snowed in except to make food and then eat it): I made hummus with my housemate.  I don’t have a recipe to share because we threw stuff in without paying attention to amounts. We used: chickpeas, lemon, tahini, garlic, olive oil, salt and peper.

breakfast: pita bread with melted Earth Balance

lunch: leftover peanut pasta

snack: an apple and I made a batch of chocolate chip cookies.  Crispen made these cookies over New Year’s and they were amazing.  I made them today and they were not as good.  I am not sure what I did wrong.

dinner: leftover peanut pasta with peppermint tea and more cookies (I think I ate 8 cookies today)

dinner x2: cooked red cabbage with brown rice.

drink: budweiser (i need to confirm that other beers are vegan. i don’t really like budweiser all that much)

desert: graham crackers

breakfast: a clementine

lunch: popcorn (some with melted Earth Balance and nutritional yeast and some with Bragg’s and nutritional yeast)

pre-dinner drink: budweiser

dinner: peanut pasta with broccoli, scallions, mushrooms and tofu.  The best way to fry tofu is to heat a pan with oil and then add the tofu.  cook until it has browned. Once it has browned add any spices or sauce you want.

snack: leftover greens and sweet potato fries with garlic

dinner: popcorn with Bragg’s and nutritional yeast.  My meals for the next few days may be pretty lame.  I am in DC where we got about 20 inches of snow last night (and it’s still snowing).  I was dumb/smart enough not to go to the market beforehand because the line was about 3 hours.  I will be eating whatever I can find around the house (i.e. more popcorn)

lunch: peanut butter sandwich with kettle chips, leftover greens and sweet potato fries with garlic.

dinner: vegan quinoa dish from Pete’s Apizza.  They have vegan pizza, but they don’t sell it by the slice and I couldn’t convince the people I was with to split a vegan pizza.

drink: New Holland Cabin Fever.  I just emailed them to find out if their beer is vegan. It’s strange how I won’t eat anything until I know it’s vegan, but I sometimes drink things without knowing if they are vegan.  That is going to stop: TODAY.  I have no idea why I was doing this.

dinner: salad (very, very plain.  I was out and there was no other food I could eat. Luckily, I ate a ton of food earlier in the day so I was hungry anyway).

breakfast: coffee from Marvelous Market (thanks Joanna!) and tea, bagel with jelly and grapes compliments of a law firm

lunch: leftover greens and sweet potato fries. Joanna commented on the stench of my garlic fries

my demise: peanut butter sandwich cookies (almost the entire container..about 20 cookies) AND a bag of Doritos sweet spicy chips.

my redemption (aka dinner):

  

Lemon baked tofu (this recipe was very good, I wouldn’t change a thing…except I did.  I didn’t realize that I was supposed to use 2 blocks of tofu instead of 1.  Basically, I doubled the marinade) with Israeli couscous salad Click for the recipe.

saladfor the couscous:

1 cup Israeli couscous cooked in 2 cups water.  I was impatient so I let the water boil and took the cover off until all of the water was absorbed/evaporated.  Normally I would simmer with the cover on until the water is absorbed.  Both ways seem to work

for the salad:

I had leftover mustard greens which I chopped up and used in place of lettuce

1 tomato diced (I only had 1 tomato)

1 red pepper diced

about 6 scallions chopped

a bunch of clementines
I didn’t have any red onion, but it could use one

It could also have used some parsley

dressing:

juice of a few clementines

a few cloves of garlic minced

1/3 cup lemon juice

1/2 cup olive oil

salt and pepper

whisk everything together. the dressing wasn’t great. I am not good at making dressings.  there was also too much dressing for the amount of food I have

I mixed the couscous, salad and dressing together and placed the baked tofu on top.

Here is a picture of my dinner. Although Zack gave me his old digital camera I didn’t have any charged batteries so I used my camera phone.  Sorry they’re a little blurry.

breakfast

1 red onion diced finely

3 potatoes diced

garlic minced (about 5 cloves)

1 red pepper diced

salt, pepper and old bay seasoning

OJ (thanks Shelley), cornmeal pancakes (thanks again Shelley…if you want the recipe let me know and i’ll ask her), tofu scramble (Eva made it. I’m not sure what spices she put in other than cumin. It had mushrooms, garlic, onion and olives), 1/2 an onion bagel with Earth Balance from Hellers Bakery.  Heller’s is great, but they don’t have vegan cream cheese or vegan margarine.  I usually bring my own. If you go there, you should encourage them to have vegan spreads.

dinner: mustard and turnip greens (cooked with garlic, onion, mustard, soy sauce, salt and pepper) and
roasted sweet potato fries with garlic.  I also had 2 pitas with Earth Balance

desert: a pumpkin spice muffin (only 1 left after this!) with melted Earth Balance and cinnamon sugar and some chocolate chips

breakfast: pumpkin spice muffin with melted Earth Balance and a soy latte from Starbucks (I had a really bad morning an made it worse with this purchase)

lunch: leftover Chipotle Garden Blend Burrito and leftover soup

dinner: pizza from Bread and Brew.  If you are in DC you have to go there. Their happy hour pizza is $5.  I had the wild mushroom pizza with vegan cheese and arugula.  Yum.  I also had their vegan beef stew- it was pretty good.

desert: pumpkin spice muffin.  I need to finish these up before they go bad.  I made them a long time ago.  They have improved with time.

lunch: 1/2 Chipotle garden blend burrito, vegan soup that a coworker made. a bag a of Lays potato chips (nasty, i know), 2 glasses of Sprite (not sure what I was thinking, but it was free), soy latte from Hello Cupcake (they do not charge for soymilk)

dinner: sandwich with carrots, lettuce, tomato, hummus, etc. It was free at a class I went to and they told me it was vegan.  I also had pineapple and grapes

post dinner: Natty Boh and Doritos Spicy Sweet Chili flavored chips

desert: pumpkin muffin with melted Earth Balannce

drink: part of a Budweiser 40 (split with Eva).  I previoulsy reported on which Budweiser prodcuts are vegan.

breakfast: pumpkin spice muffin with melted Earth Balance- sadly, I still have more of these to eat.  I also ate half of a peach before realizing it really wasn’t ripe (the problem of multitasking when you are half awake)

lunch: at Kababji Grill in Dupont Circle.   They serve you pita chips with spices when you sit down.  Although I don’t think the pita was made with eggs the wait staff couldn’t confirm that it wasn’t.  Apparently the pita they use to make the chips and the pita they use in their sandwiches is bought and they do not have access to the ingredients.  However, they also have a homemade pita (not sure what they typically use this for) that does not have eggs.  They were extremely nice and made me pita chips using their own homemade pita.  I split the Vegetables, Pickles and Olive appetizer.  It was like the name says, nothing special, but good (the people I went to lunch with wanted it).   For my main course I had a sandwich (they used the homemade pita) with portabella mushrooms and this amazing garlic spread.  The spread is whipped and looks like it has dairy, but they assured me it is only garlic and oil.  The sandwich was relatively cheap ($5) and filling (after eating all of the pita chips).

snack: leftover greens from sadza ne muriwo.  They are finally finished.  I will miss them dearly.

dinner: Heather provided me with an amazing southern style dinner.  We had red beans and rice and hush puppies (my first ones ever).  They were amazing.

desert: Heather also provided desert.  We made smores over the stove.  They were delicious.  Heather’s brother gave her vegan marshmallows, graham crackers and chocolate for Christmas.  Thanks for sharing Heather!

drink: Budweiser (40 ounce, shared with Heather)

breakfast: a large coffee with soy milk from Marvelous Market.  Although their food is overpriced, their coffee is a good deal for vegans. If you ask, they will give you free soy milk to add to your coffee (unless you order a special drink e.g. latte- then they charge for soy milk).  Also, after you buy 6 cups of coffee from them, your 7th is free.  They also give you a discount if you have a reusable mug (not sure if it has to be their mug, but I have seen people get the discount who have a Starbucks mug).

lunch: leftover israeli couscous with baked tofu and broccoli

dinner: leftover veggie paella (it was much better as leftovers. the flavor really soaked in) and leftover vegan meatloaf.

desert: Turtle Mountain (Purely Decadent) cookies and cream ice cream

breakfast: apple with peanut butter

lunch: leftover Chipotle from wednesday (see yesterday’s post) and leftover pad se-eu (without egg, fish sauce, oyster sauce) from Bambu (see yesterday’s post)

snack: I made pumpkin spice muffins with some of the pumpkin puree I made earlier this month.  The muffins are pretty gross.  I was really tired while cooking and didn’t realize that the recipe I used was low fat (i.e no oil or butter).  They also could have use more sugar.  Click here for the recipe, but beware: you need to add fat!

dinner: I made veggie paella with Shelley and Eva.  I didn’t taste like traditional paella (at least not how I remember paella), but it was good. Click for more information

entreeI don’t have a recipe to share, but here is a list of what we included: saffron (thanks Shelley!), bell pepers, garlic, onion, white rice, veggie broth, artichoke hearts, tomatoes, cumin, tumeric, chili flakes, paprika, chicken seasoning (doesn’t actually have chicken in it), salt and pepper.

snack: a second pumpkin muffin.  I smeared it with earth balance and cinnamon sugar- it tasted much better

drink: Pilsner. I just realized I haven’t written to the company to confirm it’s vegan. Barnivore says it is.

lunch: leftover greens from sadza ne muriwo without the sadza and an entire pizza from Alberto’s (veggies, no cheese).  It’s pretty good pizza, but not cheap.  There are better places in the area for vegan pizza.  I had Alberto’s because my work ordered it.

dinner with Eva: Mustard and turnip greens sautéed  with onions, garlic and a little soy sauce. Baked sweet potato fries with a lot of oil and garlic (very good but a little oily).  This was the first time I have ever had mustard and turnip greens.  They are very good.
drinks: 2.5 Budweisers.  I previously emailed the company to confirm which of their products are vegan.

breakfast: banana

lunch: an entire pizza from Alberto’s.  I left off the cheese and had peppers, onions, mushrooms and olives.  It was not cheap, but work bought it for me.  The person I spoke with at Alberto’s told me that there is no eggs or dairy in their sauce or dough.

snack: grapes, another banana

dinner: lots and lots of popcorn.  I had regular popcorn and the black kernel kind.  I added nutritional yeast and braggs to it (thanks Owen).

snack: leftover isreali couscous with baked tofu (see previous recipes)

update: I emailed Unibroue (who makes Maudite beer which I tried on 1/15/2010) to find out if their beer is vegan. Click for their response.
