breakfast: coffee (they labeled it as espresso, so i’m confused) from Marvelous Market with soy milk, salty oatmeal and a banana (I was hungry this morning)

lunch: leftover Chipotle burrito; leftover lentils from last night

snacks: pretzels and chocolate chip pumpkin bread

dinner: Eva and I went to Everlasting Life.  The website is a bit misleading (at least for now). They are renovating, but are still open.  The food is in the back of the building and you have to walk through an empty room to get there.  The people who work there are VERY friendly and let you try samples of everything.  Eva and I sampled:

sesame spinach salad,  spinach quiche (doesn’t look like quiche, but it was really good), barley salad, Live Stir Fry, Mung Bean)

I settled on getting the carrot salad (I don’t think I would get this again. It is good, but I can only it a little of it before getting sick of and they give you a ton), mock chicken salad, bean curd, kale salad).  Eva got the spinach salad, quiche, spicy tofu and barley salad (I tried all of her food).

I also ordered mac and cheese, but i didn’t eat it today. i’m going to eat it for lunch tomorrow.

dinner: lentils and greens (the mystery green from yesterday’s post stir fried with red onion, garlic, cumin and carrots with brown lentils)

dessert (how come no one told me i have been spelling this wrong?) : chocolate chip pumpkin bread (very moist!)

dessert1 cup sugar
1/4 cup vegetable oil
a little over 1/2 cup silken tofu
1 cup pumpkin puree
1 1/2 cups whole wheat flour
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup chocolate chips

Preheat oven to 350.

blend together the silken tofu, oil and pumpkin. after it is mostly blended add the sugar and blend again (we used an immersion blender and it worked really well).

sift together flour, spices, baking soda, salt and baking powder. mix the pumpkin mixture into the flour mixture. Mix in chocolate chips.

we didn’t have a bread pan (our pan was wider and shorter). we baked it for about 30 minutes until a knife came out clean.

brunch at Boneshakers (Brooklyn, NY), which I just discovered by accident this weekend… it is all vegetarian and almost all vegan, with many sandwiches and baked goods and delicious brunch options, and only 0.6 miles from my apartment: half of vegan chipotle+sage biscuits with gravy and soy sausage; half of vegan omelette of the day (tofu egg with tempeh bacon, tomato, and American-style vegan cheese), served with large potato wedges; greens with light balsamic dressing (greens came with both brunch dishes, each of which cost $10); coffee

lunch/snacks on bike trip around Jamaica Bay: whole wheat pita with Tribe chipotle hummus; Clif builder bar (most of a cool mint; small portion of a vanilla almond. The cool mint was better); bulk snacks from market at 243 Brighton Beach, just east of the the Ocean Parkway subway stop: dried apricots from Uzbekistan, dried strawberries, assorted dried vegetable “chips”, dark-chocolate-covered espresso beans (vegan according to an employee in the store). Bags of these four things plus rice crackers plus sunflower seeds plus dried papaya cost just $10. Not huge bags, but I was happily surprised by how cheap it was.

dinner: BBQ tempeh (from this recipe) on a hamburger bun with roasted red pepper + eggplant spread, romaine lettuce, and pickle

more dried vegetable chips; Ithaca Brewery Cascazilla red ale and Nut Brown Ale (both vegan according to workers in the Ithaca Brewery Store)

lunch: vegan day at bread and brew! I got a caesar salad with crispy capers and homemade garlic croutons. I also got their Vietnamese sandwich (vegan bahn mi with lemongrass-soy marinated tofu and mushroom pate) with plantain chips.  The salad was amazing, the sandwich wasn’t great.  I liked the mushroom pate, but the tofu didn’t have much flavor.

dinner: leftover caesar salad and fries from ollie’s trolley.  eva and i tried to  see women without men, but it was sold out, so we saw the secret in their eyes. We had time to kill before the movie started so we decided to get fries.  the fries at Ollie’s Trolley are not the best.  They have a strange seasoning on them.

breakfast: I splurged and got breakfast at Java Green.  I have always wanted to try their breakfast.  I got Eggcentricity (tofu egg, soy chicken & vegan cheese).  It is ok.  There tofu egg is nothing special (sticky fingers makes a much better egg)

lunch: baked tofu bean salad (chickpeas, green beans, beats, tofu, lemon juice salt and pepper, parsley), i realized i forgot to add red onion

snacks: baked lays and a banana

cupcake peanut butter something or other for admin appreciation day

I don’t remember what I had for dinner!

breakfast: cinnamon shredded wheat with soymilk; coffee

lunch from NY Dosas food cart: Jaffna Lunch (4 rice+lentil crepes with filling; coconut chutney; sambaar soup; vegan chicken wings

dinner: marinated and roasted tofu and eggplant with spinach, served on Israeli couscous, with toasted slivered almonds, fresh slivered radishes, and fresh lemon juice on top (click for the recipe)

entree

  • 1 package tofu, cut into brick-shaped cubes
  • 1 eggplant, cut into brick-shaped cubes
  • 1 onion, chopped in large chunks
  • 5-6 cloves garlic, chopped into big chunks
  • fresh thyme (a lot.. maybe like 1/4 cup?)
  • a few chives, chopped
  • 1/2 tsp minced habañero pepper
  • fresh spinach (one bunch… about 2 cups)
  • 1/4 cup sliced almonds
  • 4-5 radishes
  • 1 lemon

Broth:

  • 6 cups water
  • several stalks celery, chopped
  • about 3/4 cup dried shiitake mushrooms
  • 2 bay leaves
  • dried red peppers
  • black pepper
  • sea salt

Marinade:

  • 3 cups broth
  • 1/2 c soy sauce
  • 1/2 c sesame oil
  • 1 c rice vinegar
  • allspice (about 1 tsp)

Bake tofu and eggplant in the marinade at 400F for 80-90 minutes.  Flip periodically.  Drain (and save) most of the excess marinade.  Add the tofu and eggplant to a Dutch oven, along with onion, garlic, thyme, chives + habañero pepper.  Add about 1/2 cup of the excess marinade.  Bake, covered, 10-20 minutes.  Check periodically for dryness; if dry, baste with more marinade.  When the onion and garlic are just about cooked, add the spinach to the top, cover, and let the spinach steam for a few minutes.  Then stir in the spinach and cook a couple more minutes.

Separately, cook the Israeli couscous in 2:3 couscous:broth.  If there is not enough broth, substitute water.

Toast almonds in a pan and slice the radishes into think sticks.

Serve the tofu/eggplant on top of the couscous, with the almonds, radishes, and freshly squeezed lemon on top.

i gave in last night and went to the market.  i was feeling tired all the time from only eating carbohydrates.  hopefully the fresh food i bought will help…too bad i didn’t end up eating much of it today

dinner: i got drunk off one beer and couldn’t manage to make food when i got home, so i had leftover pesto pasta and a second bowl of pasta with nutritional yeast and braggs

post dinner snack: after i sobered up a bit, i made hummus (chickpeas, chickpea liquid, garlic, lemon juice and cumin. no oil or salt!) and ate it with some sourdough bread i got in ithaca

double chocolate cupcake and chocolate chipotle chai tea at the steeping room. this place is a weird discovery- it’s in one of those creepy malls that’s like its own little village (reminded me a lot of the one in westlake, ohio that had the trader joe’s), but it has lots of vegan food on the menu, several vegan baked goods, and tons of fancy tea. a little overpriced, but the cupcake and the chai were both excellent and worth the drive. next time i want to try biking out there for the daily happy hour or a tea tasting

lunch: sandwich on multigrain bread with Follow Your Heart Nacho cheese, large red kale (raw), chives, thinly sliced onion, imitation cheese spread, roasted red pepper + eggplant spread, and pickle slices

dinner at Papacitos: “wet” (or, smothered in vegan cheese, vegan sour cream, olives, jalapeños, etc.) vegan burrito with seitan asada; Tecate with lime

drink: sapporo at Nooshi (they have a very good happy hour deal- half all all drinks)

dinner: Chick’n Piccata at Toscana Grill with green beans and pasta.  This place was pretty gross: the bread was stale, the green beans were overcooked and the pasta was from a box (at least it tasted like it).  The chick’n piccata was good- I really liked the sauce and their fake meat was excellent, but not worth the money or the trip out to Arlington.  They did give me free daiya bread to sprinkle on my pasta and the bread.

i heard through the grapevine that toy joy has new “baby shakes,” which are 9 oz and $3.50 for any flavor. nice! however, when my housemate and i went there specifically to get them, we got sidetracked by the soft serve flavor of the week, which was strawberry. i ended up getting strawberry soft serve in an organic cone. the strawberry was quite coconut-y and delicious.
