more snacks: pumpkin seeds and another slice of chocolate chip pumpkin spice bread (I have eaten about 12 meals in the last 24 hours, what’s wrong with me? maybe it’s because i’m moving today and i have done everything i can to avoid packing)

dinner: leftovers from Everlasting Life. I am almost finished with them, but I saved a little to have to tomorrow

drinks: Miller High Life from Wonderland (I previously confirmed with the company that it is vegan.  in case you forgot, here is their response.  maybe we can figure out a way to store this information?)

MillerCoors does not use any animal by-products in our brewing process, nor are there any animal sources used in our packaging. Isinglass is not used in our brewing. There are five basic ingredients in all MillerCoors products. These include pure water, malted barley, corn syrup, hops, and yeast. Corn syrup is one of the basic ingredients used in most MillerCoors products as US consumers prefer its taste. Again, we do not use animal derived ingredients in our beer.

breakfast: coffee (they labeled it as espresso, so i’m confused) from Marvelous Market with soy milk, salty oatmeal and a banana (I was hungry this morning)

lunch: leftover Chipotle burrito; leftover lentils from last night

snacks: pretzels and chocolate chip pumpkin bread

dinner: Eva and I went to Everlasting Life.  The website is a bit misleading (at least for now). They are renovating, but are still open.  The food is in the back of the building and you have to walk through an empty room to get there.  The people who work there are VERY friendly and let you try samples of everything.  Eva and I sampled:

sesame spinach salad,  spinach quiche (doesn’t look like quiche, but it was really good), barley salad, Live Stir Fry, Mung Bean)

I settled on getting the carrot salad (I don’t think I would get this again. It is good, but I can only it a little of it before getting sick of and they give you a ton), mock chicken salad, bean curd, kale salad).  Eva got the spinach salad, quiche, spicy tofu and barley salad (I tried all of her food).

I also ordered mac and cheese, but i didn’t eat it today. i’m going to eat it for lunch tomorrow.

lunch: garden blend chipotle burrito and a banana

snack: pretzels and another banana

dinner: lentils and greens (the mystery green from yesterday’s post stir fried with red onion, garlic, cumin and carrots with brown lentils)

dessert (how come no one told me i have been spelling this wrong?) : chocolate chip pumpkin bread (very moist!)

dessert1 cup sugar
1/4 cup vegetable oil
a little over 1/2 cup silken tofu
1 cup pumpkin puree
1 1/2 cups whole wheat flour
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup chocolate chips

Preheat oven to 350.

blend together the silken tofu, oil and pumpkin. after it is mostly blended add the sugar and blend again (we used an immersion blender and it worked really well).

sift together flour, spices, baking soda, salt and baking powder. mix the pumpkin mixture into the flour mixture. Mix in chocolate chips.

we didn’t have a bread pan (our pan was wider and shorter). we baked it for about 30 minutes until a knife came out clean.

lunch: leftover orange tofu salad, sourdough bread with homemade garlicky hummus

snack: soy latte from a place that shall not be named

dinner: leftover caesar salad and a Soy Boy Courage Okara burger with grilled sourdough bread, red onion, mustard greens, tomato, veganaise and ketchup.  Katherine was right, it’s pretty good.  The last time I had this, I made it in the microwave (which is nasty). This time i grilled it in a pan (without oil). that worked well.  It’s good as part of a sandwich, but on its own, its not great

snack while watching “women without men”: I made salty popcorn to bring to the movie theater.  I really wanted to put bragg’s and national yeast on it, but i resisted.  i was afraid people wouldn’t appreciate the smell.

lunch: vegan day at bread and brew! I got a caesar salad with crispy capers and homemade garlic croutons. I also got their Vietnamese sandwich (vegan bahn mi with lemongrass-soy marinated tofu and mushroom pate) with plantain chips.  The salad was amazing, the sandwich wasn’t great.  I liked the mushroom pate, but the tofu didn’t have much flavor.

dinner: leftover caesar salad and fries from ollie’s trolley.  eva and i tried to  see women without men, but it was sold out, so we saw the secret in their eyes. We had time to kill before the movie started so we decided to get fries.  the fries at Ollie’s Trolley are not the best.  They have a strange seasoning on them.

breakfast: I splurged and got breakfast at Java Green.  I have always wanted to try their breakfast.  I got Eggcentricity (tofu egg, soy chicken & vegan cheese).  It is ok.  There tofu egg is nothing special (sticky fingers makes a much better egg)

lunch: baked tofu bean salad (chickpeas, green beans, beats, tofu, lemon juice salt and pepper, parsley), i realized i forgot to add red onion

snacks: baked lays and a banana

cupcake peanut butter something or other for admin appreciation day

I don’t remember what I had for dinner!

stacey- how nice it is to have fresh food

i gave in last night and went to the market.  i was feeling tired all the time from only eating carbohydrates.  hopefully the fresh food i bought will help…too bad i didn’t end up eating much of it today

breakfast: grapes

lunch: okra stew with brown rice (recipe is posted in the archives)

snacks: soy latte (I don’t want to say where it’s from) and baked lays

drink/food at busboys and poets while watching tapped: dogfish head brown ale and a few sweet potato fries

dinner: i got drunk off one beer and couldn’t manage to make food when i got home, so i had leftover pesto pasta and a second bowl of pasta with nutritional yeast and braggs

post dinner snack: after i sobered up a bit, i made hummus (chickpeas, chickpea liquid, garlic, lemon juice and cumin. no oil or salt!) and ate it with some sourdough bread i got in ithaca

i feel the need to explain my bad eating habits these past couple of weeks.  i am moving at the end of the month and am trying to eat a lot of the food i have in my house, so i don’t have to pack it.  that means a lot of dried goods and not many fresh foods.

coffee: free coffee from starbucks (with soy milk) because of tax day.

drink: sapporo at Nooshi (they have a very good happy hour deal- half all all drinks)

dinner: Chick’n Piccata at Toscana Grill with green beans and pasta.  This place was pretty gross: the bread was stale, the green beans were overcooked and the pasta was from a box (at least it tasted like it).  The chick’n piccata was good- I really liked the sauce and their fake meat was excellent, but not worth the money or the trip out to Arlington.  They did give me free daiya bread to sprinkle on my pasta and the bread.

leftovers: white bean salad from Whole Foods and  peanut pasta made last night

many snacks:

1) chocolate chip walnut cookies

2) Hickory smoked primal strip.  This was my first primal strip- i thought it was pretty gross

3) Whole Foods brand organic vegan chocolate chip cookies. I emailed them to find out if these are vegan.  They had a hard time giving me a straight answer because their chocolate chips are made on equipment that uses milk.  I felt ok with that since milk was not an intentional ingredient.  Anyway, they are gross- i don’t recommend trying them

4) banana chips

dinner:  as soon as i got home from work i had a beer (dogfish head raison d’etre) and fell asleep. when i woke up i was too lazy to cook dinner, so i had more chocolate chip walnut cookies, popcorn with bragg’s and nutritional yeast and matzoh with hummus

  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4-1 cup earth balance
  • 3/4- 1 cup sugar
  • 3/4- 1 cup brown sugar
  • 1- 2 teaspoon vanilla
  • 1/4 cup of silken tofu
  • 1 cup semi-sweet chocolate chips

directions

  1. preheat oven to 375°.
  2. stir flour with baking soda and salt; set aside.
  3. beat butter with sugar and brown sugar until creamy.
  4. add vanilla and tofu to wet mixture.
  5. blend dry mixture into creamed mixture.
  6. Stir in chocolate chips and walnuts.
  7. add cookie dough to a cookie sheet (about 1 tbsp heaps). bake for about 9 minutes, until golden brown

breakfast: everything bagel with tofutti from Ithaca Bakery (after eating the bagels, someone at the store told us they are made with milk.  I have my doubts about this, but the store was too crowded to ask more questions.)

1/4 ABC lemom poppyseed cookie (thanks Katherine!)

vegan peppermint ice cream (I can’t remember the name of the place). It was made with coconut milk.

dinner at Moosewood Restaurant (Ithaca, NY): house salad with lemon tahini dressing; polenta lasagna (polenta noodles, tomato basil sauce, seasoned tofu, fresh fennel, carrots and kale).  Katherine let me try a bit of her dish: Spanish Vegetable Stew (butternut squash, zucchini, bell peppers, white beans, green beans, tomatoes simmered with sherry, paprika, and thyme; served with a smoky hazelnut-red pepper Romesco sauce as well as multigrain bread)

post-dinner snacks: crackers (Back to Nature Basil-Sunflower and Blue Diamond Natural Almond Nut Thins smokehouse flavored) with imitation cheese spread (We Can’t Say It’s Cheese Non Dairy Chedder Style Spread) and Susie’s seitan slices (locally made). None of this food was very good, except for Susie’s seitan.  The seitan tasted like a healthier version of Tofurky.

drinks: Ithaca Beer Company (Cascazilla, Gorges Smoky Porter, Cold Front amber ale… all vegan according to the person in the store, except for the Alfalfa beer which has honey.)

post drink snack: almond-cranberry biscotti baked by Katherine’s mom (very good)
