lunch: leftover sweet potato, okra and chickpea gumbo; baked lays

dinner at the vegetable garden: jasmine tea; scallion latka (not that good); veggie abalone (yuba, shiitake mushrooms, tomatoes, broccoli and soy protein in a light brown sauce)- this was pretty good; sesame beef with yuca (this was by far the best meal); sweet & sour veggie chicken (battered firm tofu, red bell pepper, carrots, sugar snow peas, pineapples, rambutans, dried cranberries in a sweet and sour sauce)- this was by far the worse dish; brown rice

entree2 blocks of tofu

2 tbsp soy sauce

4 tbsp olive oil

4tbsp lemon juice

4 tbsp dijon mustard

2 tsp sugar

2 tsp dried basil

2 tsp thyme

freshly ground salt and pepper

1) mix all of the marinade ingredients together

2) baked on 400 for 25-30 minutes turning halfway through

3) enjoy

dinner 1 at asylum: miller lite and happy hour soft tacos (specify you want the vegan taco- it comes with beans, rice, vegan cheese, etc)

dinner 2 at radius while watching the state of the union (they had their happy hour special during the State of the Union- $5 for a very nice beer and a slice of pizza): their dough and sauce are vegan. they made me a slice of vegan pizza with artichoke hearts; i can’t remember the type of beer i had

snack while making dinner: tortilla chips with salsa

dinner at nate and shelley’s: rolled stuffed eggplant (eggplant sliced lengthwise into 1/4 pieces then dipped in a batter of water, flour, and salt. next pan fry the eggplant until lightly browned. roll eggplant with slices of vegan cheese and baked for 20 minutes at 375. cover with heated homemade tomato sauce and serve. loosely based on this recipe); garlic bread; pasta with tomato sauce; salad with lettuce, cucumbers, carrots and balsamic vinegar; sierra nevada

drinks/food at shelley and nate’s: sierra nevada; miller high life; 1 bite of a lime tortilla chip (i thought they were plain- the lime ones have dairy); plain tortilla chips

drinks at heritage: budweiser; bud light; hummus (make sure they know you want the bread to be vegan); pakoras (make sure they know you want it vegan- the sauce isn’t vegan)
