slightly weird but rather successful mediterranean-soul food fusion: cooked chickpeas and black-eyed peas (pan fried in olive oil until crusty and golden), brown rice, steamed collards, all covered in ginger-miso dressing (recipe from whole foods); ate de membrillo y guayaba (see previous). click here for ginger-miso dressing recipe

sauce
pulse in food processor/blender until creamy:

  • a 2-in piece of fresh ginger, coarsely chopped
  • 2 tbsp white miso
  • 3 tbsp tahini
  • 1/2 c water
  • 3 tbsp lemon juice

spelt zucchini muffins from the babycakes nyc cookbook, with a few adaptions. i made them lowfat and then ate a bunch of them with lemon buttercream frosting (recipe from vegan cupcakes take over the world) on top!

leftover couscous, butternut squash, miso walnut sauce, plus the addition of a handful of fresh mint leaves; asparagus miso soup (see previous); blackberries; last bite of okara brownies

peanut butter potato chip cookies: i made them to bring to an archivists’ potluck on friday. these are the ultimate proof that vegan≠healthy, but also that vegan≈delicious. adapted from skinny bitch in the kitch (i have mixed feelings about this cookbook); click here for my version

dessert

  • 2.5 c flour (all-purpose or whole wheat pastry)
  • 2 tsp baking soda
  • 3/4 tsp salt
  • 1.5 c granulated sugar
  • 1 c canola oil
  • 1 c peanut butter (creamy or chunky! your choice!)
  • 1/4 c cold water
  • 1 tbsp molasses
  • 1 tsp vanilla
  • 2 c coarsely crushed potato chips (i used classic lays)

preheat to 375 and grease a baking sheet. in a large bowl, mix sugar, oil, and peanut butter thoroughly (by hand or with a mixer). add water, molasses, vanilla and mix. add flour, baking soda, salt and mix. fold in potato chips. form balls of 1 tbsp, and lightly flatten onto baking sheet with fingers. bake 9-11 minutes, until edges turn slightly brown. allow to cool.

i ate a lot of them.

lots of samples stolen from whole foods bulk bins (my favorite is called “dr. chocolate” which is hearty grainy sweet crackers dipped in dark chocolate); raisins

leftover whole wheat couscous, butternut squash, and miso-walnut sauce; asparagus miso soup (click for recipe)

soup

  • 4 c h2o
  • 3 tbsp mellow white miso
  • handful of asparagus, cut into bite-size pieces
  • block of firm tofu, diced
  • handful of spinach

boil water in a pot. in a separate bowl, mix miso with a couple tablespoons of the hot water, forming a paste; add the paste to the water (do it this way so it doesn’t clump). add the rest of the ingredients, remove from heat, and let sit for a few minutes.

whole wheat couscous, steamed chard, roasted butternut squash, miso walnut sauce (click for recipe)

saucesoak 1/2 c of walnuts overnight. roast at 350 for 10 mins. in food processor, combine with 1/2 c water, 2 tbsp mellow white miso, 1 tbsp brown rice vinegar or lemon juice, 1 tbsp brown rice syrup, and an inch or so of chopped fresh ginger. pulse until creamy.

oatmeal with agave and fresh blackberries

whole wheat pita with kalamata olives, roasted hot pepper, spinach, and homemade roasted garlic and sun dried tomato hummus. hummus recipe here.

saucerehydrate about 3 sun dried tomatoes by placing in a bowl of boiling water. while they soak, in a pan on the stove roast about 5 large unpeeled cloves of garlic until they blister on the outside and are soft on the inside.

  • 1 c cooked chick peas
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • sea salt to taste

pulse the above ingredients in a food processor, adding water until a creamy texture is achieved. (this is my basic hummus recipe and to make plain hummus i would just add a clove or two of raw garlic and a generous pinch of paprika.) remove the garlic cloves from their peels and the sun dried tomatoes from their water and add both, pulsing to chop and distribute evenly.

evening snack: 1/2 an everything bagel with hummus on 1/2 of the 1/2. i guess i was feeling hesitant to commit.

later evening snack (i.e. what i really wanted): the last gingerbread pig (see previous) smothered in strawberry conserve!

at fiesta, the bakery section which always smells so so good is strategically placed right by the entrance, so you pretty much have to smell it. i usually sniff longingly from a distance, but today my housemate and i stopped to eye the king cakes. i ended up looking at some other pastries and realizing that while most of them have eggs, almost none had dairy, using vegetable shortening instead of butter, and quite a few things were actually vegan. we caved and got empanadas de calabaza (pumpkin turnovers) and marranitos (dense pig-shaped molasses cookies).

red bean chipotle burger served on a leaf of rainbow chard, topped with sliced avocado; sweet potato fries with ginger peanut dipping sauce from vegan soul kitchen; a friend’s home brewed lager and vanilla porter;  chocolate cake made from bob’s red mill’s gluten free chocolate cake mix, prepared according to the directions on the package but substituting earth balance, soy milk, ener-g egg replacer, and ground flax to make it vegan, and served warm with strawberry jam. a friend brought this to dinner, and it was by far the best chocolate cake i’ve had in a long time

phoenicia bakery whole wheat pita with the mediterranean chef’s grandma’s humus (see previous post), sliced pitted kalamata olives from the central market olive bar, spinach, and this roasted/charred green pepper i found in a plastic bag in the fridge, which someone brought to tamalefest. the pepper was unseeded but wasn’t very spicy, just extremely delicious and almost sweet. the peppers are big, but skinnier than a bell pepper- not sure what kind of pepper that is, but i look forward to eating the rest of them; heirloom navel orange; peanut ginger sesame cookies (see previous post)
