summery potluck: tomatoes with fresh farmers market basil, balsamic, salt, pepper; quinoa pasta salad with green beans, corn, celery, cashew “feta” cheese, dressing; mango; red wine

did you make the cashew “feta” cheese? do you have the recipe for the quinoa salad with feta? it sounds so good.

my friend made it, but i’m pretty sure she used this recipe. apparently you can skip the baking step and it’s just as good. she put ground black pepper on one log of cheese and rosemary and lavender on the other. the salad was just a bunch of summery veggies tossed with quinoa pasta and an herby vinaigrette, with the cheese crumbled on top. it was delicious!
