breakfast: shredded wheat with soymilk; coffee

lunch: peanut butter and jelly sandwich; plaintains sauteed in Earth Balance

Boston chocolate chip vegan cookie; pita chips

dinner: vegan chipotle mac ‘n’ cheese (recipe from Veganomicon, with added chipotle and adobo sauce), some made with collards; sauteed collards with garlic; Nectar IPA (may or may not be vegan)

    how did the mac and cheese turn out? also, do you think emily and/or marcy are ever coming back?

    The sauce burned a bit, but the chipotle helped mask it as a “smoky flavor”.

    I hope they come back. I miss the penpal aspect.

    But our end-of-the-year list of all the unique items that 4 vegans ate for the year can be a list that 3.3 vegans ate for a year, or whatever it comes to!
