pumpkin bread

terrible stir fry from a place in the student union center: all kinds of veggies, soggy tofu, white rice.

a small glass of red wine to celebrate the fact that both my housemate and i are done with finals!

dinner at the counter: veggie burger with cranberries, onions, mushrooms, mixed greens, soy ginger sauce. sweet potato fries.

gin and tonic at duke of perth. i noticed that they actually have a few vegan options on their menu, which is the last thing i’d expect from a pub that’s trying to hard to be authentic. but cool!

homemade pumpkin bread with chocolate chips that i made for my class. recipe in the archive.

leftover split pea soup with rice

potato chips and fruit, red wine at departmental event

dinner with friends: brussel sprouts roasted with onions, s/p until they were pretty black and then drizzled with balsamic. tofu breaded with panko and fried. pumpkin soup

soup

  • 1 onion, diced
  • about a cup and a half of pumpkin puree
  • vegetable broth
  • cumin
  • crushed red chiles
  • dried sage
  • s/p
  • lime juice
  • about a 2 teaspoons brown sugar
  • coconut milk
  • quite a bit of fresh cilantro

sautee the onions with herbs and spices. add the pumpkin puree. when the puree is cooked, add the veggie broth. when soup is hot, add the lime juice, sugar, coconut milk and cilantro. we were too lazy to blend this, but normally i would.

yellow split pea soup: split peas, veggie broth, dried coconut, kale, tamari, pepper, lemon juice. brown basmati rice.

dark chocolate square–i forget the brand, it’s super common

half of a medium vegan pizza from ian’s: soy cheese, eggplant, red peppers, mushrooms, spinach, basil. this was the best vegan pizza i’ve had so far. vegan chocolate banana oreo milkshake from pick me up cafe.

canned chick peas, canned tomatoes, canned curry paste, cous cous, all thrown together in a pot with salt, pepper, water for cooking the cous cous, and a little brown sugar.

gluten free vegan potluck: too many things to remember. black bean and plantain “hash”, cornbread, guac and chips, two different quinoa dishes, apple salsa, etc. the things i brought were (1) brussels sprouts roasted with almonds, onions, apples, olive oil, apple cider vinegar, s/p (this was awesome–i cut the sprouts in half and put them in at 400 degrees and everything got a little black) and also bananas with makeshift chocolate sauce and raspberries on top.

late dinner at pick me up cafe shared items: vegan pizza with this really amazing whipped tofu spread that i’m going to try to recreate, burrito with all kinds of veggies served with refried black beans and yellow rice, side salad. i also got a banana chocolate oreo milkshake and took sips of a plain chocolate oreo milkshake. phew, i’m definitely wishing that i hadn’t eaten quite so much.
