lunch: leftovers from McCurdy’s Junction House- acorn squash cornucopia (roasted acorn squash filled with a stuff of barley, apples, dried cranberries, walnut & sage. drizzled with maple syrup and served with sliced roasted beets
snacks: vanilla chia tea with unsweetened vanilla soy milk (much better than the almond milk); an orange
dinner:beet burger with avocado slices, tomato, and nayonaise (not nearly as good as veganaise); salad with mixed greens, raw beets, avocado, and pecans; roasted asparagus and beets; fat tire beer
dessert: a spoonful of vegan ganache; a bite of a vegan gluten free brownie
