homemade pumpkin bread with chocolate chips that i made for my class. recipe in the archive.
leftover split pea soup with rice
potato chips and fruit, red wine at departmental event
dinner with friends: brussel sprouts roasted with onions, s/p until they were pretty black and then drizzled with balsamic. tofu breaded with panko and fried. pumpkin soup
- 1 onion, diced
- about a cup and a half of pumpkin puree
- vegetable broth
- cumin
- crushed red chiles
- dried sage
- s/p
- lime juice
- about a 2 teaspoons brown sugar
- coconut milk
- quite a bit of fresh cilantro
sautee the onions with herbs and spices. add the pumpkin puree. when the puree is cooked, add the veggie broth. when soup is hot, add the lime juice, sugar, coconut milk and cilantro. we were too lazy to blend this, but normally i would.

did you add any spices to your panko tofu? how did it turn out? i recently bought my first panko breadcrumbs, but i haven’t tried them yet

i just added salt after frying in this case, and then i think i forgot to mention that we ate the tofu sticks with bbq sauce. mixing spices with panko is hard because panko is so big it floats to the top and then you get no spices on the early stuff and way-too-intense spices on the later stuff. it can be done though, i’m sure…
