whole wheat couscous, steamed chard, roasted butternut squash, miso walnut sauce (click for recipe)
soak 1/2 c of walnuts overnight. roast at 350 for 10 mins. in food processor, combine with 1/2 c water, 2 tbsp mellow white miso, 1 tbsp brown rice vinegar or lemon juice, 1 tbsp brown rice syrup, and an inch or so of chopped fresh ginger. pulse until creamy.
